Quince was first cultivated in Mesopotamia, an area between the Tigris & Euphrates Rivers that is seen as the birthplace of western civilization. It’s tart, and we’ve added ginger and rosemary. It makes an excellent topping over cream cheese, spread on toast or fill a crèpe.
